The navy bean got its current popular name because it was a staple food of the United States Navy in the early 20th century. These small white beans are perfect for making baked beans. Dry navy beans are available year-round in prepackaged containers as well as bulk bins. Canned navy beans are also available year round at local markets.

Navy beans are small, pea-sized beans that are creamy white in color. They are mild-flavored beans that are dense and smooth. Like other common beans, navy beans are one of 13,000 species of the family of legumes, or plants that produce edible pods. Combined with whole grains such as rice, navy beans provide virtually fat-free high quality protein.

Ingredients
1 pound navy beans.
1/2 cup olive oil.
2 cups chopped onions.
2 teaspoons minced garlic (optional.)
1 large carrot, chopped.
2 stalks celery, chopped.
1 6oz-can tomato puree.
3 quarts water.
1 cup chopped parsley.
Salt and pepper to taste.

Preparation
Soak the beans in hot water for 30 minutes. Saute the onion, garlic, carrot, and celery in oil until limp. Add the tomato puree and the water. Bring to a boil. Drain the beans and add them. Add salt and pepper to taste. Simmer for about 2 hours, or until beans are tender. Add the parsley 15 minutes before removing from the heat.

serves 6-8

Not so sure about the carrots and the celery for this dish.

I have also seen people put potatoes also. Again, not very ideal.

If using Beef or Lamb, be sure to boil it for 5-10 minutes, to remove the "dirt" which floats to the surface, before browning it in oil, along with the onions and tomatoes.

I don't see the purpose of throwing away the hot water that the beans were sitting in. Adds more flavour, if you kept it.

Couple of Chicken or Beef Bouillon (stock) will also enhance the flavour.

Also, sprinkle some black pepper, when served on a plate

Try it with mince meat, if you don't want too much meat in your food.

Yeah, I think you are probably right LENA. I think finding the right lady on the internet... well, I don't think there's a very high chance of that ever happening! ;)

Lena,

I totally agree with you, that this meal tastes great just by itself, without meat. That's the way I usually make it, except this time, I added some mince beef into it.

Have you tried the salad version with these beans...it taste great also.

Kikapu:
I will try those with beef I promise.
What salad version? I know beans (white ones or brown...I don’t know the name sorry :( ...) that you can make them with tomatoes, celery, carrots, potatoes....(you know the recipe)...or just boil them with carrots and potatoes (those you can make them salad) ... and I know a third kind which are bigger than the normal size and those usually we put them in the oven and we serve them with fish always (I know a great recipe for Carassius auratus gibelio – “tsipoura”)!!!!!
