Knife Sharpening ??

Feel free to talk about anything that you want.

Devil - for what it's worth - I invested in a set of Sabatier knives quite a few years ago. They weren't cheap, but other than the fact that I can't sharpen them properly, they're brilliant knives. They came with a block too.
Having said that, I think that if I were to buy some new ones now, I'd go for the solid steel ones (with the integral steel handle) as even Sabatier handles crack after a while.

£120 seems an awful lot. The problems with Debenhams are a) their profit margins are phenomenal on much of the goods they sell, even at reduced prices and b) there is no one there with sufficient technical knowledge to really advise on matters like the steel quality and temper. That is why I would prefer to go to a professional cutler who knows his trade.

I don't want the tin rubbish that supermarkets sell but something with best quality steel blades that can keep their edge for more than five minutes and can cut wafer thin meat or fish without snagging the fibres.

Last time I have seen good quality knives at the newly established Marks and Spencer store in Nicosia. I bought a 3 piece stainless steel saucepan set last week 15 cy pounds. This is a new store and has furniture and many other household items including food.

Sabatier handles only crack if you stick them in the dishwasher...

Marks in Nicosia is good I have to say...

G-Man ..... my only dishwasher is my wife, and yes, the thought of sticking my Sabatier's in "the dishwasher" has crossed my mind on occasions!
Happy Christmas to one and all, and best wishes for 2007
