Oh dear

Andri --- the elephant's foot refers to the shape the meat is moulded to .

It's placed on a vertical grill and rotated -- slices taken off when the exterior 5mm of the meat is cooked.

It's very nice when it's been freshly put up but after a few days of sitting there being reheated every so often it can be pretty rank.

It's full of fat and is often made from a mixture of the bits of meat that are not saleable --- but then again so are Hamburgers / beefburgers.

I guess you don't have this delicacy in your area of the US

No sorry, I will claim my ignorance. It is mine. So it is a reference to pieces of doner kebab then?

Hi Andri

Elephants foot refers to a huge lump of meat either reconstituted or layered meat that resembles a elephants foot and about the same size-- placed on a vertical grill and the slices shaved off this are what we know as doner -- packed in a pitta with salad and some sauce

Andri

I'm 60 years old -- have been working for the same company for 43 years in various departments -- I'm the one they come running to for solutions to problems and yet I still don't know every thing  .

But I have over the years learnt to bullshit with the best of them on things I haven't a clue about  .

You know the old saying -- your never to old to learn something new  .

A proper elephants foot is made from spiced minced lamb, with added egg, moulded into blocks about 3 inches thick, that are then stacked on a skewer seperated by small pieces of breast of lamb to support the weight..

And a good one is very nice...

Sadly most doner shops now buy the foot from a dodgy wholesaler and its rank.... full of fat, made from mechanically reclaimed lamb (dont ask) and really should be avoided at all costs..

LOL, if you worry about not washing their hands after peeing when ordering a kebab, you are not drunk enough to eat one from a van in the first place...

Thats the LEAST of your worries...
