I love Trahana
my mum makes it all the time

she cooks the wheat in yogurht/water
until really thick then
makes slabs of it, we freeze it until ready for use
will get the quantities for you.......

I always add vegeta stock to my water (chicken stock) when cooking it, a bit of salt and lots of pepper
its my favourite soup in the whole wide world!!!!
serve with halloumi cubes!! delish!

anastasia your a girl after my own heart.if you can get your mum to tell you exactly how to make it quantety ingridients etc.... that would be very kind of you as id love to have a go at making some many thanks

rulla - havnt forgotten about you..........my mum is in Cyprus so will get the recipe off my mother in law

Ok spoke to MIL she said

1kg Greek Yogurht
2litres milk

boil together
add 1kg wheat - fine wheat for Trachana
add some salt

mix until it thickens - leave to cool
if its too stiff add a little more warm milk and knead like dough
make slabs of it and wrap in plastic gladwrap in the freezer until ready for use

when u cook - make sure you have some chicken or vegetable stock as this add flavour, I always add
salt and pepper and shredded chicken, halloumi and tiny bit of cinammon too!

your Darling thank you so much im going to give it try probably make it next weekbut im going to roll it in pecies and dry it in the sun as i live in cyprus and its very hot and should dry very quickly then i can store it in containers for my use wheneve i want please ask your aunt if this recipe is ok to dry in the sun many thanks koukla

yes should be fine to dry out
just make sure it thick enough to roll into trahana biscuits
so maybe dont add all the milk - add as u need it.......
