Consumers want shops open 24/7. You need to come to the other side to understand why this schedule is required.

Blame the Brits!
Half days on Wednesdays and Saturdays dates back to the early half of the 20th century when factory workers were allowed time off for recreation.
Sundays were reserved for church attendance.
