Thanks Anastacia, just one thing, the wine has to cover the meat completely? Also i thought there were other spices in Loukanika.
whats the recipe for Bastourma i love those.

THEVOO im still waiting for a reply, o my previous post, wanting to see if i know you, because i wasnt aware of other people from Klirou living in Melbourne apart from my cousins.

yes make sure its covered completely.........loukanika is the wine tasting ones
my mum said thats all she put - salt pepper and corriander

How easy was it to find pig caul fat in the US? Any suggestions about maybe whatsort of place I should be looking fopr it at?

andri- just ask your butcher
he'd know what u are talking about - Im sure there are Greek butchers or Croation/Italian butchers

what part of the US are u in??

Andri, i just noticed your location. Does that mean Indiana? I grew up in Kentucky and went to University of Louisville.

Tara I am right outside Jeffersonville Indiana which is like 15 miles from Louisville. Small world huh?

Hi Andri,

Coincidence - an aunt of mine is named Andri. 8)

In any case, finding caul fat is not very easy. I tried a couple of butchers and they don't carry it because it doesn't sell very well. One told me he could order it, but I'd have to buy 10 gallons of it. That would put anyone off that looked into the fridge!

So I go to Astoria in Queens; an ethnic Greek/Cypriot neighborhood. The grocery stores there tend to carry it. I'm not familiar with how you're situated vis-a-vis Chicago, but there may be a Greek/Cypriot ethnic area there that would carry the caul fat. That's probably the best way to go.

I think everyone has an aunt called Andri or Androulla heehee
Hey my mum's aunt lives in Astoria - I visited in '95
cant wait to go again.....
