The fat from around kidneys (lamb and pork)used to be stretched and used to wrap around "faggots" I think thats fairly easy to come by (in england and Ireland anyway), and looking at raw sheftalia its very similar if not the same thing!!!

isnt that called Pig caul or something like that

I have a great cookbook by Tessa Kiros
called Falling Cloudberries
she is half cypriot and half finish, married to an Italian and the book is amazing, its super thick and my favourite!
has a great section on Cyprus with traditional recipes ...........wonderful!!!

That would be great if yuo could give me that recipe for Loukanika, ive found a few but i dont think they are correct because its for greek loukanika, i think Cypriot loukanika are different (better).
As for the garlic its not a problem i love it.

For sheftalies just ask for caul fat from a pig, its the actual lining that wraps around the stomach and intestines.

Hey Marz
I asked my mum - this is what she told me
buy fatty pork - mince well
put in large bowl
add enough dry wine to cover the meat - add salt, pepper and slightly crushed corriander seeds
leave to ferment for a week - she said to keep in the fridge if u like but not really necessary
you need to keep adding wine as it soaks it up so make sure there is always enough wine in the bowl
after a week - drain and sausage mince into washed intestines (from your butcher - wash thourougly and wash with white vinegar too so u dont get an off animal smell)

no garlic matey - thats barstouma

the ones in cyprus just have salt on the pork
we normally use lamb and add salt, pepper, lemon pepper and oregano.

but she has been in Cyprus for 10yrs now.......gorgeous great friend of mine!
