Are you looking at hiring a car or going by coach?
By Car then Latchi and Polis, and the Akamas. In similar vein Avakas Gorge, out to Turtle bay/Lara beach, which is on unsurfaced roads (or was last time I went) than if you have a reasonable vehicle go over the top to Neo Chorio to Latchi - again on brown top. Also look at some of the Villages like Fyti and Steni, (good village life Museum) or up through Paphos forest to Troodos via either via Steni to Stavros Tis Psokas for the Moufflon or via Pano Panagia up Cedar Valley . Surfaced but twisty roads. (There are some un-surfaced routes which are OK if it has been dry). If you make a longish day of it it is possible to get to Kyykos. Distance is not big (in a straight line) but the roads are "Scenic". Otherwise from Polis head east along the coast to Pomos
In Pafos itself you have the two big sets of ancient ruins.
