Mbamies, so delicious with or without meat, I usually grill them on low heat topped with plenty of lemon juice, olive oil salt and oregano topped with Italian grated cheese, a meal on its own.

I love kolokasi too, alas my diabetes is not so keen !!!!

...i will try your steamed halloumi, in a proper steamer at a restaurant; i will visit my friends in their kitchen, and share it with them.

indeed, pass the recipe along.

...you can flambe halloumi, off the grill and into the zouki.

Granted you mentioned the pork dishes which are not Cypriot but actually Greek . You mentioned fasulya which is not Cypriot but ottoman . That was their main diet during their conquests . Gave a lot of energy .kebab is ottoman . You might make it out of pork but that don't take the foundation of its origin . Greek Cypriots make dolma don't they ? But you call it dolmades or kubepya . Do you know what dolma means . It means stuffed . MOST OF YOUR FOIDS ARE INFLENCED BY THE OTTOMAN DISH . ITS A FACT OF LIFE AND HAS NOTHING TO DO WITH POLITICS . ITS OBVIOUS IF YOUR GOVERNED FOR 400 YEARS YOU WILL ADOPT THE CULTURE AND THE FOOD . THE BRITS WERE IN CYPRUS FAR LESS AND NOW WE ARE DRIVING ON THE RIGHT SIDE OF THE ROAD . When the ancient Cypriots were enjoying all sorts of teas and coffees you did not even exist. :lol:
