The main variety of flower in a wild-flower crown would mostly be Gypsophila (baby's breath) and Cyprus florists usually stock varieties of this as standard (it is a native and grows wild, but as Tim said, only early in the year). Then you can add a variety of daisy-type plants like small carnations and Margaritas to give it the substance - and again all florists would stock these. Then it's a matter of filling up with the foliage and any accentuating eye-catching detail. I'm sure if you went to any florist and spoke to them, you'll find they can get you what you want.
I made my own too.
Alternatively, you can go really native and make them with fresh olive-leaf, laurel-leaf with some branches of oregano/thyme and even basil, intertwined with some satin ribbons. Like a classical Greek wedding.
