Many moons ago while a student I used to pick up a Chinese friend for a few days to take to campus because his car had gone for repairs. Sometimes he wasn’t ready on time so I would get invited in his flat where the pungent smell of little cubes of pork-fat floating in this disgusting juice first thing in the morning, still haunts me to this day!

I will NEVER forget that stench!

Forget the Europeanized stuff they serve at Chinese restaurants today… this recipe was the REAL DEAL all the way from his little village somewhere along the Yangtze!

Force me to eat that shit and I will betray Cyprus… proclaim myself Greek even!
