The people at the synagogue will probably help you to find kosher salt.

hmmm....I understand from Dr Wikipedea that most salt is Kosher but what is called Kosher salt is not a pickling salt..... not the right grain size or shape....

Pickling salt is just used for curing meat, for example to make smoked pork chops. You put the meat in this salt for some days, the special supplement gives the meat a rose colour, if you just use salt, the meat gets grey.
So sorry, has nothing to do with ''kosher'', with the mormons :lol: less than ever.

Pickling salt just doesn't have iodine added. The iodine affects the colour of whatever you pickle, as you have observed.

Call these people, they should be able to help you.

Thanks CBBB. Sailorsalt don't have it.
The pickling salt contents 0.5% Sodium nitrate. As far as I got to know this makes the difference.
Nevertheless, googling around I find out that this supplement is not part of wholesom food, so probably I'll try it with usual salt before curing.......
We'll see.

No need to go to Utah when we have our own salt lakes.....
