As per wikipedia (which has references)
Halloumi cheese originated in Cyprus and was initially made during the Medieval Byzantine period, subsequently gaining popularity throughout the rest of the Middle East region. The word halloumi comes from ancient Egyptian via the Coptic ialom.

It is probably an Arabic (or Persian) Dish in origin, dating back to at least 13th Century, while the main version now cooked in Greece and Cyprus with a bechamel source is now thought to be a recent development (1920's) made bya French educated chef, Nikos Tselementes.

Just making a mousaka now, but mine is a anglo-italian version using cheddar and parmesan in the bechamel. No good for Deniz though, I use a mixture of beef and pork mince!

I prefer it without this 'bechamel' stuff so dont worry about it. :lol: Trying to keep the cholesterol down as well. :lol:

I have no problem with cholesterol, I have never had it checked!
