Onion Bhajis
Igredients
10gm fresh ginger
10gm fresh garlic
4 fresh green chillies
85gm besam flour (I normally use plain flour, but wholemeal would probably be better)
1/2 tsp salt
1/2 tsp chilli powder
1/2 tsp garam masala
1/2 tsp , tandoori masala
90ml water
2 large onion sliced into rings
cooking oil for deep frying
Method
1. Liquidise the ginger, garlic and chiilies, with a little bit of the water.
2. Sieve the flour into a bowl with the rest of the spices.
3. Add the liquidised mixture and the rest of the water, mix thoroughly.
4. Chuck in the onions and mix well.
5. Heat the oil, and when it is hot drop spoonfuls of the mixture in. Do not do too many at once otherwise they will stick together.
6. When they have obtained a nice dark golden colour, drain and place on some kitchen towel while you do the rest.
and now the Onion Relish.
Ingredients
110gm onion peeled and sliced into very thin rings
3/4 tsp salt
4 tsps lemon juice
1/4 tsp paprika
1/8 tsp cayenne pepper
Method
1. Mix the lot together and put in the fridge for at least 30 minutes.
2. Stir it up a few times while in the fridge.
After one of my curries we normally leave the windows open for the next couple of days!
