P.s im cooking your chicken 2mo night and wanted to ask you can i use white wine instead of beer??? x

yes with white wine is excellent ! :wink:

below the recipe with eggplants ( Melanzane alla parmigiana )

ingredients:
3 large eggplant
1 large can of tomato cubes ( do not use ketchup :lol: )
1 mozzarella or halloumi
salt and pepper
basil leaves

Prepare the eggplant:
Round-cut them into slices about half a cm, and sprinkle with coarse salt and let stand for 30 minutes.

Prepare the tomato sauce:
- in a pot add a little olive oil and half an onion cut very thin, expects the onion is blonde and then add the can of chopped tomatoes, lower the heat and cook for 5 / 10 minutes, then add a little salt and pepper and some basil leaves.

If the sauce gets too dry you can add a ladle of water.
I the sauce is too acid add half teaspoon of sugar.
When the sauce is slightly thick, turn off the fire.



Prepare the cheese:
- in the original recipe we use mozzarella if you do not find it use halloumi or cheese like cheddar...or similar but you have to cut into thin slices (less than an inch thick) or diced or shredded small enough.

Now take the slices of eggplant that you put aside and rinse under water to remove the salt (this process is because the eggplant loses its bitter taste), then dry the slices on a piece of paper before putting them in a grilling low pot hot.
Get a pan suitable for oven and begins to make alternating layers of grilled eggplant - a bit of cheese and tomato sauce.

Finish with a layer of tomato sauce and some fresh basil leaves. If you find a bit of grated cheese is even better!
Put the pan in the oven for 30 minutes at 200 degrees until it forms a little crust above.
In total, to prepare a dish of eggplant takes about 1 hour. And it is also delicious the next day!

below another fast recipe :

Rise with prawns and zucchine
**You can also substitute the zucchini with frozen peas.

Ingredients ( for 2 or 3 people )

2 cups of rise are equivalent of 400 gr ( do not use basmati or Cantonese because can easily go overcooked )
1 onion
slice of butter ( lurpak is good)
2 zucchine ( ladyfingers ..? )
8-10 prawns or shrimps ( also frozen are good and cheaper)
white wine :D
1.5 liter of broth = zòmos ( melt 2 and half Maggi cubes in boiling water )
Some parsley if you like

I use this to prepare broth :

Prepare the zucchini:
wash them and cut into rounds.

Shrimp: if you use fresh ones must first clean them, it takes some time but the rice is much tastier. Note: if you use the frozen ones from the supermarket that you just open the bag and poured them into the pot directly.

Melt a little butter and finely chopped onion in a pan BETTER USE ONE WITH HIGH SIDES (do not hold the heat too high because the onion will burn) after a few minutes add the rice and stir everything with a wooden spoon for 3 or 4 minutes you will see grains of rice becoming slightly yellow.

Now add a glass of white wine, stir and let it absorbs well.
Pic the zucchini and prawns and add them into rice in the same pot.

At this point to continue cooking rice you must start adding the broth that you’ve prepared in advance with the maggi cubes.
You have to put one or two ladles at a time until you see is well absorbed and remember to stir !

For the cooking time depends on the type of rice that you are getting. It usually takes 20 minutes but I always taste before.
If the rice is still too hard you add even a little bit of broth or water until it absorbs. Turn off the fire add the chopped parsley if you like, and cover with a lid for a few minutes before putting it in the dishes.
Preparation time: 30 minutes
This should be the result :wink:

if you like swordfish....

SWORDFISH WITH ONIONS IN SWEET AND SOUR SAUCE

INGREDIENTS for 2 persons :

2 swordfish steaks (about 400 gr)
250 ml of water (approximately 1 large glass of water )
2 tablespoons white wine vinegar
1 teaspoon sugar
4 red onions
2 tablespoons extra virgin olive oil
salt
2 garlic cloves
pepper and oregano ( optional )


PREPARATION

Wash the swordfish under running water, then put it in a colander.
Make a mixture with the indicated doses of water, vinegar and sugar.
Peel the onions and cut into wedges.
In a pan put a tablespoon of olive oil, onions and fry over high heat for 2 minutes.
Then add the mixture of water, vinegar and sugar, a pinch of salt and let boil again cover with lid, over medium heat for 15 minutes ( to reduce sauce )
Put in another pan a tablespoon of olive oil and garlic cloves peeled and crushed.
You can fry the garlic until it is golden brown, then remove it and put the swordfish. Cook on medium heat, about 5 minutes per side, extending a few minutes to cook according to personal taste.
Serve swardfish with onions, a generous grinding of pepper and a handful of oregano.

HAHA your chicken recipe is good i only modified little tiny thin witch is not using beer :))))) swordfish !!! can i get that in Cyprus, dont think so but kori take it easy i cant cook more than one thing a day :D

haha but you must been helping other people having few skills in the kitchen go ahead and never stop x

You can get swordfish in Cyprus, it is Ksifias. Be careful not to overcook it though.

You can get swordfish in Cyprus, it is Ksifias. Be careful not to overcook it though.


Yes blue rabbit ......3 or 4 minutes are enough :wink:
