Basicaly as far as I know there are two methods.
For both ways your cam has to be still, preferaby on a tripod and it must not move even a tiny fraction of a centimeter in order to have good results.
1. If your cam is professional enough it can take pictures every few seconds for few hours, you stick the pictures in a video editor and it looks like a video at the end. I didnt do this way cause my cam cant do that plus I think 2nd way is way better.
2. You let the cam record a video for as long as you want and can, then you put the video/videos in a video program and just squize them from few hours into few minuites or seconds and it looks like that.
Basicaly its called time lapse video and if you search on google how to time lapse video you can find loads of staff.
I used a metallic tripod, panasonic lumix fz28 camera, plastic tape all over camera and tripod so nothing and I mean nothing moves, if you can put some rocks or weight around tripod legs to minimise movement.
