Mmmm yeah, me too! ... And all of the above including trahana. Raw onion eaten like an apple with mpamyes trumps fassoulada though.

Add kokoretsi to the no-can-do list. Eeew!

The fisrt time I came to Cyprus 1982.. my husbands Papou & Yiayia kept Goats behind their house, Yiayia used to make the best haloumi ever & she also made Trahana which were all hand rolled and layed out in the sun to dry,& her own scortalia. (my children were almost suffocated with garlic breath being breathed all oever them for days afterwards) & my very special treat every morning!!!! was a glass of WARM GOATS MILK straight from the goat ( which I drank with a smile as I didn't want to offend... OMG I could taste the goat yuk! yuk!yuk!).

Warm goats milk - now there's a sweetly (?), evocative memory of a Cypriot childhood! :D Can't touch it now I've been corrupted by cows' milk!

The spelling of some words intrigues me. I wonder if the posters actually hear/perceive the sounds the way they spell them:

Gologasi instead of Kolokassi
Gouneli, rather than Kouneli

Often i see G being used instead of K and B instead of P.

OK now lets us test your knowledge of true Cypriot cuisine. How many of you know shylari, magilles, ressi, epsima, titsiries? Anyone ever tried crepes on a hot stone the way they made them in Rizokarpasso?
