A stifado is so easy to cook! Just Google it and you will get loads of hits.

I have cooked it many times, very successfully.

Lagos (not the shithole in Nigeria) is preferred, but rabbit will do.

O, I think substituting the meat with mushrooms should be nice if not even better.

Brilliant! :D Some really firm mushrooms stewed with lots of onions, tomato puree, cinnamon sticks, garlic, vinegar, olive oil .... anything else?
