But molokhiyya has become part of Cypriot cuisine now. They cook it better than the Egytians. Did you know that the recipes for Molekhiyya are on old Egyptian Papyri?

id didnt know they do melokheya in cyprus.. eww i bloody hate it (even tho load of ppl love it) !! but i love okra.. shame i dont know how to cook it !! cypriots on CF would anyone be jind enough and tell me how to cook okra !!

Deniz, molokhiyya? Are we talking molesha in grcy? Mallow in English?

No Mallow is different. That has palmate leaves and best cooked with egg and aggrelli/Asparagus. Just checked Wikipedia; some call it Jews spinach.

Molokhia is the Grekified word. You must know it. he leaves are narrow, like the shape of a slender cypress tree. Stewed with chicken served with lemon and garlic.

This is much the same as Turkish Cypriot Bamyeh:

Bamyeh (Lebanese Okra Stew)
Hearty okra and beef stew with tangy fire roasted tomatoes over basmati rice.

2 large bags frozen okra, sliced or whole baby okra

1 lb stew beef

1 15oz can fire roasted tomatoes- diced

1 6oz tomato paste

2 tbsp beef base

4 large garlic cloves, minced

2 tbsp chopped Italian parsley

2 tbsp olive oil

salt & pepper to taste

In large pot add okra and cover with water, about 2 inches above top of okra. Cook on medium-high heat to boil. Meanwhile, in medium frypan on high heat add 2tbsp olive oil, place stew beef in pan and brown each side for about 2 min each, remove from heat and set aside. To okra, add can of roasted tomatoes, tomato paste and beef base, cover pot and let simmer for about 30min. In same frypan that beef was cooked add minced garlic and sauté for about 2min. Add beef, garlic, parsley and salt and pepper to okra, simmer for another 30min. Remove from heat and serve over steamed rice with lemon wedges
