And in answer to your question, think of the pressure placed on them by NATO to not acknowledge that one NATO jet shot down another one - this kind of thing really makes a mockery of NATO as a military alliance committed to mutual defense.

As a member of NATO, Greece benefits from the mutual security guarantee. If they were to admit that they shot down a mongolistani jet, they would weaken this security guarantee that they benefit from.
They shot the plane down, they know they shot it down, and the owners of the plane know who shot it down. With respect to shooting mongolistani jet down, mission accomplished.
Nothing further is gained by going on about it, but something is certainly lost by weakening NATO, to which they belong, and from which they derive a portion of their security.
