I have a humax 5100 reciever.
The dish antenna is currently receiving nilesat channels.
How do I make it receive channels from other satellites like hotbird or astra.
Can this be done?

Yes but you have to point the dish to the Hotbird or Astra satellite,but you will lose Nilesat,unless you get a motorised system. And you will need a satellite alignment meter.
Get the person who installed your dish to repoint it toward Hotbird or Astra.
