Here's something simple that turns out more delicious than you can imagine (my brother's culinary contribution to my life
)
One pepper per person (preferably the long thin ones, red, yellow or green). Slice longways down the side. Remove seeds. Add either slices of halloumi or slices of feta or probably any cheese. Wrap in foil and either put on the BBQ or in the oven for half an hour.
