Our daughter and her fiance were running The Lagoon in Kato Paphos for a little under a year. We were looking to maybe buy it but eventually we decided that it wasn't in the best position for the tourists and it relied pretty much 100% on tourism (which we all know is down in the toilet at the moment).
We saw Dillons and liked the premises and position. It has fewer tourists than Kato Paphos but also has less competition.
On the other hand it's closer to Pegeia and Chlorakas, where there was a better chance of ex-pat customers. So we're hoping that it will fair better.
The main thing is that we want to offer something a little different. Not just the same kind of restaurant as so many others are.
We hope to offer good quality food without the customer spending a fortune but for the reastaurant to have a comfortable, sophisticated ambience.
The Dillon's premises lends itself well to what we want to achieve.
In the new year we plan to change the name to CAFE BLUE EYES and we want to have the feel of the kind of place Sinatra might go to.
So, in our eyes, the actual location was not bad as we want it to be a place where people will want to go to.
