I would not know Nikita, I have never actually ever tasted it or the soup before. I remember everyone going on about having the soup after Easter mass and, after trying out Halil's recipe the other day, I fancied making this one too! Looks like I am doomed not to.............

.............unless somebody wants to make me some - and before Easter please! :wink:

Bubbles,

Best thing is to get a neighbor to do the "egg cutting" (literal translation) which is the critical part, and watch them do it. It is one of those hands on procedures which cannot be verbally conveyed. Once you see it you will get the knack. That is for the soup.

The sauce is a gleoggy thingy which is plastered over dolmades and stuffed vegetables by mainland Greeks. I don't recall ever seeing it in Cyprus. It is an "acquired" taste, which I for one am not going to acquire.
