How did I try to capitalise on it? The developer sold it for £300,000 not me. I'm £120k out of pocket at the moment and the developer has had my money for 4 years earning interest on it.

In the quest for justice one must always face the truth of the situation, YOU are not a property developer and therefore should not deal in property development.
Obviously the property you were purchasing suddenly (through no fault of your own) increased in value.
Can you really condemn the developer for seeking to advance the potential profit by One Hundred and Twenty Five Thousand Pounds ?.
I am sure you will be able to negotiate a fair settlement IF you forget about the money the developer has made, after all, making money for his investors is the primary consideration for any successful business, quite obviously the developer IS successful and your money represents a small detail to it.
