We have always intended to go and see Kafenes 'perform'. Alas, we never seem to be in Pafos on the correct nights. This will be rectified by the end of the year!

I love figs,(served on a bed of ice - is this a Cypriot thing?) alas they are not good for my ample figure! :lol:


i am not sure about serving of figs . i liked to eat them at morning with bread and Hellim .

and here is the Yayla soup for you .

1/4 cup rice
5 cups of water (if you wish you can use half chicken stock, half water)
i can recommend to use chicken broth2 cups of plain yogurt
1 egg
2 tbsp flour
2 tbsp butter
2 tsp dried mint or tarragon
1 tsp salt

-Boil rice in 5 cups of water with salt until (very) soft.
-In a bowl, beat the egg and flour well, and then add yogurt and mix. With 1-2 tbsp water lighten up this mixture.
-Put the yogurt mix in a pot and start cooking on very low. It's important that you start with low heat, otherwise yogurt would curdle. Give yogurt some time to get used to heat. Cook on low heat for approximately 15 minutes and keep stirring.
-Slowly pour in rice along with water into the soup. Keep stirring. First let it boil on medium and then turn it down and cook for another 10 minutes.
-Heat butter in a pan. Once it sizzles, add mint flakes and stir for 20-30 seconds (don't let it burn). Then, pour it into soup.



Halil,

Have just made (and eaten) this soup - followed to the letter!
I have to say that it was not quite as tasty as in Kyrenia although still quite edible.
We (Webbo and myself) thought it was a bit tart and could have benefited from a tiny amount of sugar! What do you suggest? I did use light yogurt - should it have been the full fat variety?
Still, we enjoyed it regardless - and I personally can recommend it to others.

Anyone now have a recipe for the avgolemoni soup please? I have heard lots about this but never tried it. Thanks :)

Thanks for the lovely time we had. Also the Magarina Bulli was marvellous. True, authentic Cypriot food. Now Bubbles wants directions. I will send it for her soon. How are the young couple? Regards to your wife too.

Yes I did meet Zan. I also met GR on a previous visit. Is there a problem?

I will not write letters from the trnc, as I visited Cyprus North and South. My greetings are from all over Cyprus.

Welcome back Deniz!!

I must apologise for our quick meeting but as you know we had to shoot away. I am hoping that we will meet again and have more time to talk and get to know each other better. I perhaps should have kept the day clear but I already thought that we were imposing on your first day there as you must have been tired. Your family are wonderful and your grandchildren are as cute as buttons. Hope you kept well through the heat.
