So you are after the twists then.

When making Moussaka I normally use a mixture of pork and beef mince (the beef alone is normally too dry.
I sometimes use a layer of sliced mushrooms instead of aubergines as I have visitors that don't like aubergines.
I put grated cheddar into the bechamel and sprinkle some on top.

Sorry, nearly forgot, I normally put a couple of oxo cubes in as well, just makes it a bit meatier.

I must admit, I was in Cyprus over Easter and brought a few (at 3 pounds each!!!!) but none tasted as good as the ones Mum and I make.... even if I say so myself


I like flaounes...I hate sultanas...actually I hata all dried up fruit...incl tomatoes in that...

I like fresh...

Mum made a lot of flaounes as per usual...dad makes a lot of loukanika...the funny thing was they were in Cyprus the last 2 months, and accidentally turned off the deep freezer in their house...discovered it 3 weeks later...The place stunk...bought them a new one freezer but unfortunately no flaounes and loukanika for the rest of the year...shit shit shit...

The old man was unrovable when he found out...no loukanika for meze with zivana... :lol: ...ouuu that hurt... :lol:

I said sorry...he said sorry is a half a shit... :lol:

don't u fear if you don't find out how your Mum cooks kolokasi her recipe may be lost??? When I read cookbooks, they use slightly different ingredients and the dishes never taste the same as my Mum makes.

ouch!!!!!!!! That is nasty... loosing loukanika... that would make anyone cry! Does he put that black spice in his loukanika? I think it is called Shinno... I cannot find it anyywhere - tried googling it but faied miserably!

My dad used to fry up courgettes and throw eggs into them ... Looked a mess but tasted heavenly ...

sure does....I will ask him where he gets it...I am calling him now...he said he gets from Cyprus...none left and they are getting it from other Cypriots...they making loukanika next week and they are on a hunt :lol:

My wife loves cooking and she learns from the old lady...she even makes trahana fro me... she knows how to make kolokasi...growing the damn think is the problem...I aint a green thumb

do you know what the English name of strouthouthkia is? I found out that louvania is called Cyprus Veitch and apparently use to be Richard the Lionheart's favourite salad... but I wonder if he ate it with olive oil, vinegar and salt? :roll:
