I thought we could all get togethar on this forum and talk about our favourite cypriot foods and maybe give others recipes and instructions on making our favourite cypo foods and mezes.

One of my favourites is called "firin makarinasi" which translated is "oven pasta"
Now i know roughly whats in it but anyone got the recipe, please forward it.
It has a layer of long thick tubular pasta topped with a creamy cheesy sauce then with a layer of cheese on top which is the cooked in the oven till done, it is very delicious.

are koupes Cypriot food originally because I know they are also part of the Lebanese cuisine.

Thinking back to the mighty souvla I had on Sunday... :)

Pork souvla, pastourma, wine sausages, baklava, dactyla... yum...

Kebabs , souvla ,pastourma ,mahalepi : These are my favourites but no recipe available at the moment!

I recommend getting the famous Cypriot cookbook, you know the one that's on about it's 20th edition (with the waiter in traditional dress on the front). I've got it downstairs but can't be bothered to move!

Here's my top ten Cyprus meals:

1- Şeftali Kebabı(Sheftalia)
2- Golagaz(Kolkasi)
3- Furun Magarınası(Oven Macaroni)
4- Suvanbastı(Rabbit meat in minced onion cooked in oven)
5- Musakka(But not GC mousakka, it's different than TC musakka)
6- TC pastırma(TC pastourma - I didn't try the GC one though
7- Mulihiya(I don't know if GCs have this)
8- Pirohu( I don't know if GC have it)
9- Magarına bulli(Macaroni and chicken)
10- Yalancı dolma(Fake Dolmas)

Top Ten Vegetables:

1- İnginar(inginari)
2- Gulumbra
3- Yumurta Otu
4- Ayrelli
5- Pakla
6- Darı
7- Bulgur Pilavı
8- Pirinç Pilavı
9- Kıprıs dumadezi

1- Stiphado (beef or rabbit stew casseroled with wine vinegar, onions and spices.)

I have no idea, but I've seen koupas in Lebanese/Syrian food spots too.

My favorites are Mousaka and Koubebya (stuffed vine leaves) especially the tiny bite sized ones....mmmmmmmmm
