Xyba ... My brain is getting tired and wants a change (MEGA) ... it could be disastrous for the foreseeable future ...

How do you stay so cool, calm, collected, content ... stable, reliable .. etc

Or is there something I don't know?

It's simple. Unfortunately there are too many negatives in life and people grab onto these negs and try their whole lives battling the negatives instead of embracing the positives. I've come to realise, I've gotta exploit the positives. Life is great when you can accept that :D

how can you forget the salt ? Souvla with no salt is not good . Much Salt and Bay leaves gives a very good taste! lamb of course is the best!

If they eat once a week it wont be a problem. no one has died from salt :more people die on traffic accidents !

Salt is very bad for people suffering from hypertension

Exactly cooking it slowly with patience is also a good technique that adds to the taste. if you dont have patientce then you will most likely fail to cook it properly!
