Hi Ya
My wife and I have been on the island for 5 months, we have the same dreams as your family.
We have no children over here and it is not as easy as we thought.
Things do not happen fast Over here and there are a lot of ex pats which have there regular people they use.
Saying that, things are picking up very well for us (Im a qualified electrician and I have I have my City & Guilds certificates to prove it).
Do not come over here thinking it will be easy, it wont be.
As for the child? there are schools, Greek and English.
Private is dear the greek Im not sure.
Dont ever think it will be a breeze to come over it will definately not be . If you can get over the first 6 months then go for it.
