Halloumi in Pitta bread is very tasty ! I also use parmesan cheese with basil, garlic, olive oil and vinegar in spagetti and its very delicious!

Yes, and the brine was a saturated solution, they kept adding salt to the water till it would float an egg. Then they put in the halloumi. Over the ensuing months it would absorb so much salt that it is impossible to leech out no matter how much you wash it.

For a comparison try tasting some halloumi the night it is made (for some reason all the times I saw it being made it was nightime). So soft and sweet!

It was the first sign of many that things were not OK, should have picked up on it then. Learnt my lesson though, kept away from Cypriot girls ever since! I put multiculturalism to practice!

Oh yes, settled but not down yet, not by any means! As for the exceptions among Cypriot girls, sure there must be some, maybe many, but you know what they say in the UK, once kicked twice shy. It was like pavlovian aversion therapy, it worked! For some reason the Cypriot word "faousa" comes to mind.

The word 'faousa' comes to mind many a time on the Cyprus-forum. Unfortunately the appelation fits the wearer. :lol:

Halloumi grilled, fried or fresh ...love it with watermelon during summer, grilled in pitta with tomatoes....

Fetta is salads yuuuuumm and fetta pie...i even liked it in pizza

Anari is great with pasta and if its fresh for breakfast...dont like the sugar on it though. Of course the best is the pourekia

Good morning Tess. Yes brine is part of the preserving process.

They used to hang them up before they had refrigerators, in flat baskets suspended from ceilings. Oh God, what were they called? :lol:
