I question to the lovers of Cypriot food.

Ok one of my friends is cooking something that comes from different country than hers for a party (rule of the party) and she asked me to tell her something from my country with olives because she loves them. And she ask me for something "fresh" like a starter or something like that but anything else that comes to your mind will do me. So can you think anything apart from salad please?

When is the party just wanted to know how long we got to answer.

Tachini, taramosalata, olives, bread, halloumi, anginara, houmous and a little side salad. Wicked. Who needs more food than that?

Have fun

Saturday...and I said a dish with olives....I know all that but she needs to cook something. I agree love them all...few months ago when we had a food party at the flat and we all had to make food from our countries we were all full only with the starters that I prepared and we had only a small flavor taste from the other food.

Lena, she has chosen a very difficult product. I would have suggested an olive and orange cake which my mum makes but very hard to succeed the first time.
My suggestion: Take a tortilla bread (or even thin Lebanese pita open into two). Spread it with a mixture of Philadelphia and fetta cheese (creamed together), sprinkle it with olives cut into small pieces. Roll it and slice into 2 cm pieces. Not traditional but very easy and tasty.
Sorry, that's the best I can come up with.

Kafene I was expecting more from you. Yes I know she has chosen a difficult one thats why I made this thread. We eat a lot of olives home but on their own not as an ingredient apart from salads, home made olive pies (eliopitta), pizzas, on vegetable souvlaki etc etc.

I want something traditional.

Nikita....you are my other hope. Where are you?

Lena, sorry to disappoint you. The only Cypriot traditional olive recipes you will find is 'Elies je psomi' or 'elioti' which basically is the same thing (olives mixed in bread dough), 'elies oftes' baked in the oven and 'elies diganites' fried.

Good Luck :)

Kafene you are a star :D I forget about oftes elies. My dad used to put them in the wood oven with eggs after he took the food and the oven is still hot.

Olives don't form part of any Cypriot main dish and as you'll already know they're either in the salad or on their own... with the exception of eliobitta which isn't a dish but a sugarless cake.
