Years ago, my father who did most of the cooking at home, in the UK, would on occasions cook couple of sheep heads in water with lemon juice and all. Then we would all sit around the table, and break open the skull and eat the meat off the jaw bones.

It tasted rather delicious actually.

The brain was left for last. :wink:

The only thing that would remain, were the bones and the eyes.

Not had the chance to repeat the above experience in the last 25+ years.

I had some the other day, which I froze some from last month cooking.

I still have another serving left in the freezer, plus another uncooked batch.

It's my favorite and I make it with beef here in Switzerland since my girlfriend does not like any fat on her meat.

In the old days, my mother would add a large piece of sheep fat into Molohiya / Moloha to add flavour, and then she would eat it, as is, like a big marshmallow..Uhhhh all the kids did not like seeing her do that at all.

well...nowadays with the colestorol warnings the fat is a turnoff,but to be honest...Molohiya doesnt taste as good without the lamb fat..
My wife cooks it with chicken and its not the same!!

Another of my favorites is Herse...Herse was the main food of Cypriot weddings many years ago..Not many people know how to cook it these days..

I love the old style simple village foods

Fasoulaki mai Arni

Lahana fried with eggs and vinegar

Stiffado made from home raised rabbits at the end of the garden flavoured with home made wine vinegar

Home made kokkinelli and zivanier (great for rubbing on chest and defrosting car windscreen in winter I may add)

The father in law used to buy a Piglet and fatten it for slaughter at the end of the year. Nothing was wasted ....Home made Loukanika and Lounza smoked hanging in the kitchen above the wood fire.....Chiro meri ...streaky smoked bacon ...

Even the head was used for the best zaladina in the world...mmmmmm yummy

Fresh eggs and chicken on demand and home grown Veg throughout the year

The sweets and preserves from the fruit trees .....Stop me now I could fill the thread with this..... :D
