It looks delicious. Would parsley on top of the tomatos change your recipe too much?



You have reminded me of something my Mum has not made for a long time now Kafenes....


She used to make the koftes but with the rice in the mixture. This was then put into the oven with potatoes and the usual tomato and olive oil mixture with spices and condiments. Add some yogurt to your plate and a nice chunk of fresh bread and.....MMMmmmmmmm!!

Kafene...after you mashed them you boil them, fried them, put them in the oven or just serve them with the fresh tomatoes, onion and parsley?

Kafene...after you mashed them you boil them, fried them, put them in the oven or just serve them with the fresh tomatoes, onion and parsley?


Lena, you boil the red cracked lentils first and then turn the fire off and add the boulgur which in turns absorbs the rest of the water and it becomes like a thick paste. In the meantime you fry the onions until translucent and mix all together with some salt and tahini. That's it! The tricky part is the proportion of water with the lentils.

I have written the recipe for you.

Lentil Kefte

1 cup red cracked lentils
½ cup boulgur (fine for koubes)
1 medium onion
2 tablespoons tahini
2 cups water
Oil for frying
Salt


Boil the lentils in 2 cups of water until cooked (soft), turn off the fire and add the boulgur and leave for a while (until boulgur absorbs the remaining water and goes soft).
Chop the onions finely and fry them slightly.
Mix all together with the tahini, add salt and leave it to rest.
(Much tastier when eaten cold).

Caution: Make sure the lentils don’t stick to the bottom of the pan while boiling. Keep stirring.

How about Firin Kofte with potatoes ...doesn't your mother cook that dish?
One large Kofte (size of a roast beef) with hard boiled eggs and carrots inside cooked in oven...

diner time is coming up... :lol: :lol:
