Keima=kiyma=mince meat
Koupes is used for most of these dishes with bulghur wheat. Never heard of it being boiled, but damn it (sorry) my stomach is rumbling too.

Sounds delicious. Enjoy (as I am sure you will)
Regards

We should all gang up on Kafenes and force him to cook a big banquet for us.

Must admit my failing- i love koupes, but I never managed to make them look or taste respectable. Just cant manage to get the shaping right. So I resort to the nearest Lebanese restaurants (Koupes are unknown in Greek cuisine). Someone must give us hints on how to shape them so they dont fall apart. Then I can decide to boil some and fry some. An interesting historical tidbit- the British soldiers posted in the Middle East in WWI called Koupes "Syrian Torpedoes".

OK, next summer, if not before, I will hunt him down, and I am sure a few of you will join me. We need to teach him a lesson. His mum will regret ever having him. :lol: :lol: :lol: :lol:

Mine is Kleftiko
Cyprus baked potatoes
Beef Stifado

I would like others but I am afraid I do not like Coriander. If I wanted perfume in my food I would tip some in.
But that is just me. Hubby and son will eat anything.

Seeing all these dishes wsith Bulgur made me crave afelia and bulgur. The inclusion of photographs in these posts is very seductive. Got to stop this, it is not fair for us expatriates.

I do not know if it is me, but have you Cypriots living abroad noticed that souvlaki/kebab abroad does not smell or taste like it does in Cyprus? Won't say anything about Greek souvlaki because I dont want to be rude. A Cypriot souvlaki person should come here and open a decent joint.

Lena, sorry for the late response, just got home from work. I might have heard some old folks also calling it Ichli Kefte but not sure. I really want to learn to cook all these dishes as I think they are on the 'endangered foods' list. :)

Andreas, I believe you will be visiting my neighbourhood soon. If you let me know before you arrive I will make for you the best lekhmajunes you have ever tasted. :)

BTW there is a place in Larnaca which specializes in koupes and lekhmajunes. It is called Maklavs and it's on Thessaloniki street in the suburb of Drosia. Preety good but not as good as mine. :)
