KEIMALI KEFTE ( I call it BOILED KOUPES)

Mum made some yesterday. If you have never tried these, then you are really missing out. :)
They are made in a similar way to Koupes (except the skin has beaten beef mixed with boulgur) but instead of being fried, they are boiled.

Dont you know Kafenes runs a torture chamber?

Keima=kiyma=mince meat
Koupes is used for most of these dishes with bulghur wheat. Never heard of it being boiled, but damn it (sorry) my stomach is rumbling too.

Kafenes should be banned! I think he does it on purpose just because he's got a mum that makes all these yummy things for him and I don't! :(

Deniz,

We should all gang up on Kafenes and force him to cook a big banquet for us.

Must admit my failing- i love koupes, but I never managed to make them look or taste respectable. Just cant manage to get the shaping right. So I resort to the nearest Lebanese restaurants (Koupes are unknown in Greek cuisine). Someone must give us hints on how to shape them so they dont fall apart. Then I can decide to boil some and fry some. An interesting historical tidbit- the British soldiers posted in the Middle East in WWI called Koupes "Syrian Torpedoes".

Noooo...banning him is not the answer...We should organise another board meeting and arrange all sorts of delicious cypriot dishes...Off course Kefanes will be invited also BUT we tie him up on his chair with a rope and eat everything in front of his eyes... :lol: :lol: :lol:

Hey people, I would love to invite you all to my place and cook for you all this yummy dishes which you have never tried. If you don't mind coming all the way to Paphos, then you are most welcome. Sometime in November when the weather is a little cooler I will organise one Sunday lunch for everyone (will ask mum to come and help as well).

Nikitas, you can get an attachment for a mincing (or sausage) machine which is designed to make koupes. You can buy both the machine and attachments for around £40.
