the method;

GREAT STUFF BUT IF ANYONE CYPRIOT CANT MAKE THAT WITHOUT A INGRDIENTS LIST ...THEY SHOULD BE BANNED FROM CALLING THEMSELVES CYP ...


Here are the ingredients to make Cypriot Kpofte.

the ones which are cooked in hot oil consists of,

Mince meat, chopped onions, grated potatoes, eggs, parsley, salt & black pepper, as well as being covered in egg beat just before going into the hot oil.

Today is my Swiss girlfriend's mother's birthday, and she was invited, to take her out to dinner tonight by us, but she refused. Instead she asked if she can have the meal below, which has been cooking for the last 7 hours.

One for the Cypriot Food I say. :lol: :lol: :lol:

Leg of Lamb in the oven, cooked over 6-8 hours, covered with Aluminum Foil with inch of water in the pan. The lamb is pierced with a small knife and placed a cut garlic all over. Also salt and black pepper all all over with "Italian Herbs". High temperature for the first 4 hours, turning the lamb every half hour, them low temperature for the next 2-4 hours. The meat just falls off the bone. Soak the lamb in it's own juice in the pan, and serve with roasted Potatoes with green /young beans, and pepper gravy on top of meat and Potatoes.

Some of it is Cypriot and the rest has been improvised.

I have a real serious question to you all.

How much extra weight are you prepared to have on you, if you can eat any or all of the Cypriot dishes we talked about in this thread.

If you can eat anything and how ever much you wanted, are you prepared to have extra weight.

1. 5 lbs

2. 10 lbs

3. 15 lbs

4. 20 lbs.

5. 25 lbs

I'm willing go as much as 10 lbs over my usual weight.

In other words, if I stop eating my favourite Cypriot foods, and the amount, I will weigh 10lbs lighter than what I weigh now. :lol: :lol:

In Cyprus it is not the amount you eat it is the way you eat. I always manage to lose a few pounds weight in Cyprus. And that is after tasting almost everything. The opportunities to take a lovely walk under the stars is there - as opposed to goimg to the pub or collapsing in front of the box in the UK. I plead guilty. :cry:

Like Deniz, I too lose weight in Cyprus even though my relatives force feed me when I am there. I think that the secret is to move more and stop eating fast/junk food.

And now a question from me to all the Turkish Cypriot cooking enthusiasts. I was fascinated to read that vinegar is not an ingredient used in Turkish Cypriot cooking. Is this true?

I also read (not on this forum) that vinegar is one of the foods to be avoided for health reasons. I was wondering if the avoidance (if true) reflects health benefits for the community as a whole, like lower incidence of ulcers, candida infections etc.

I am sure its not always true. It depends on the locality . I never ate the rabbit and onion dish because of the vinegar.
In all other foods it is absent. Used only in pickles (ambelopoulia) and salads.

All my years of cooking Cypriot Food, I have never used vinegar, except for salads or pickled hot chili pepper while eating Molohiya / Moloha, if not just raw onions.!!

As far as vinegar and health concerns, never heard of anything as such. If there were, surely this would effect the GC population in the RoC, since they do seem to use vinegar.

I even enjoy taking a swallow right out of the vinegar bottle.

Surely it must help clean out the system a bit. :lol: :lol:
