Ofcourse we do Kafenes, we are spoilt for choice. Theres nothing like Cypriot tastes. Hotels should do more to introduce the genuine flavours on their menus for the tourists. Yet on the other hand let them eat cake. We appreciate the genuine taste of Cyprus better than anybody else.

Bogrulce = Black-eyed beans (green with this dish)
Kabak = the white 'cougette' (small marrow) of Cyprus

In summer these are boiled and olive oil and lemon juice is added. My grandfathers' fav.

The Kabak used is usually 'Bal Kabagi'. Honey marrow. This is one veg that I have forgotten the greek name of. Shame on me.

Hi Halil, hanks for the info. My late father was a chef at the Cafe Royale in Regent Street London for many years. Before that he was cheff in one of the oldest Turkish Restaurants, so I did have a good teacher. My wife also is a good student of cooking and she cooks most of the above, but I must admit when cooked in Cyprus with Cypriot vegetables they taste better.
Thanks again, selamlar
