To keep them from falling apart, refrigerate them for a few hour before cooking.

So what goes into them Filitsa. ??

For the ones I just made which are cooked in hot oil consists of,

Mince meat, chopped onions, grated potatoes, eggs, parsley, salt & black pepper, as well as being covered in egg beat just before going into the hot oil.

You needn't add anything more than what you've included already. It's the refrigeration process prior to cooking that prevents them from falling apart while being cooked.

My mums version is: The same as any kofte mix but smaller and round. About the size of a Malteser. You then fry them first and add only when the spinach is nearly cooked. Yummy!!!

Yes, I'll try your method. Meat tends to "shrink" upon cooking anyway, so it should in fact tighten it self into a ball, when cooked gently.

@ Zan,

I must admit, I do not remember my mother frying the meatballs first, but I can see where that will help keep the meat together in a ball.

Does anyone know what GCs call Tatar Boregi. Small pacels made fro pasta filled with minced meat and onions with parsley, served with grated Hellim?

We use an egg in our mixture anyway. My mum assures me that if you do not fry your koftes first you will end up with ispanak bolognese. :lol: :lol: :lol: :lol:

I'll tell you what. When I make it, I will do so with your mothers way, and also Filitsa way. I will have a "test control" to see which way fairs better.
