Today I cooked one of my favourites Koupepia, I also love Makaronia tou fornou, Kleftiko and Souvla (Kid when possible). I recently had a good meal on a day visit to Bournemouth at the Zorba Taverna. The owner kindly recommended me to Cyprus Donkey at Egham, Surrey which is closer to my home in Hampshire but at present haven't managed to get there.
Anyone got any other tavernas in Berkshire, Surrey or Hampshire they can recommend.

It's into the kitchen for me for the next couple of hours. I making about 100 Koftes. Fortunately not the usual size, but smaller ones.

In honor of our part-Venetian heritage. It is one dish I often crave and have never managed to cook right! And it is not only Cypriot, wherever the Venetians went they know it- west of Greece, Dodecanissa, etc.

When it comes to cooking, a major source of cultural information about a place, we Cypriots often forget our debt to the Arabs and the Italians who were on our island for some considerable time. Moussaka, halloumi, baclava are arabic in origin, ravioles are obviously Italian. And a suprise for us all- sheftalies are French, maybe left over from the Lusignians. The French cook something very similar and they call it crepinette and caillettes.

Of course you are correct Filitsa, that while you ladies are in the kitchen, we the men are on the computer. But it should be noted that even though Zan does not cook in the kitchen like some of the guys, he does make a "meal" of most of his posts here on the Forum. :lol: :lol:

Are you talking about those small meatballs in Spinach dish Zan.?

Funny you should mention that, because I have been thinking about making that dish one of these days, but was not sure what goes into making those small koftes, so that they don't fall apart while cooking.

Served with yogurt of course.
