This particular piece is called an Adana Kebab. It is the finest lamb minced by hand. Yes hand, not put through a mincer but cut and cut again with a special knife. A portion is then taken and dipped in a pile of parsley and then into a pile of chili pepper and then molded on to a skewer. It is cooked on charcoal, proper charcoal, and served on home made pide bread. Next time you are in the UK Villa I will tell you where to get the best in London. The place that Rick Stein visited on his program and loved it. Forget the Doner or the Giro (?) this is the mother of all kebabs. Do not buy one from a Cypriot. I know this is a mute point but only the Turks and the Kurds can make this properly. You have been warned...You WILL go back for more.
