Hiya :)

Me and my mum have just been discussin what kleftico (Spelling Not Verified) was made out of! I thought it was beef but she ses it was lamb. It was very tender and tasted buitifull and my mum says they cook it in a clay oven. Is it made out of beef or lamb or somthing else?

Thanx please reply cos were starting to argue lol

Bills right..... but it should be goat ....... Far more succulent

i got told a story once of how it got its name....

A farmer was tending his flock in the fields once upon a time and he was cooking his meal of goat in a hole in the wall and it was stolen while he was elsewhere (klefti is the greek verb to steel) so therefore iit was kleftid and it became known as kleftico...... probably a load of bul**hit but there you go

It's usually the meat of an old goat! Even a croc would get "tender" after spending a day in a clay oven! :)

Isn't the story something to do with outlaws cooking it underground so the smoke didn't give their position away?

By the way - the main beef dish is a stifado - again - most delicious

It could be sheep or goat but normaly an older animal. I was told that after it was gutted they used to cook it in deep holes in the ground with the skin on and skin it afterwards.
